Satay (sate)

Sate, Satay [sah-tay]. An Indonesian favorite consisting of small marinated cubes of meat, fish or poultry threaded on skewers and grilled or broiled. Sate is usually served with a spicy peanut sauce. It’s a favorite snack food but is also often served for an appetizer and sometimes as a main dish.




  • 1 kg Chicken, boneless, skinless, cut into bite size pieces.
  • Bamboo skewers


  • 100 gr Onions.
  • 50 gr Shallots.
  • 30 gr Ginger.
  • 30 gr Garlic.
  • 100 gr Chopped lemon grass.
  • 100 gr Galangal.
  • 1 tsp coriander seeds .
  • 1 tsp cumin.
  • 1 tsp cardamon.
  • 1 tbsp turmeric powder.
  • 100 ml cooking oil.
  • 3 tbsp honey. (or to taste)
  • Salt, pepper, knorr to taste


  1. Toast and grind all the seeds, bring all of marinade ingredients to blend in blender. In a large bowl, marinate the chicken about 2 – 4 hours (Keep in fridge), and then, make skewers with bamboo stick. (Need soak bamboo in water before you do) .
  2. When serving: Grill or barbecue until done. Serve with peanut sauce, rice cubes,  onion dices, diced cucumber. Some chefs do  with nasi goreng ( Indonesia fried rice).



Ingredients and method are most the same as chicken sate. In marinade, add oyster sauce and dark soy sauce (Because these sauces are salty, when you add in, should cut down amount of salt.
