Also called SATE SAUCE, It is a sauce made from ground-roasted peanut, chile (dried and fresh), …. It is used in the cuisines of INDONESIA and MALAYSIA as a dip or a condiment. Peanut sauce goes well with chicken, meat and vegetables. It is often used to add flavour to grilled skewered meat such as satays, poured over vegetables as salad dressing such as in GADO-GADO, or as dipping sauces for spring rolls.
- 1 kg roasted peanuts, skinless, crushed .
- 50 gr chopped shallots.
- 30 gr chopped garlic.
- 4 crushed lemongrass stalk.
- 2 tsps Chilli powder
- Palm sugar to taste
- Tamarind juice, salt, water or coconut water
- 100 ml cooking oil for sauteing.
- 2 tbsps Tomato paste (Optional)
In hot pan, sauté onions, garlic, lemon grass. Add all ingredients, and cooking until peanuts get tender (Tasting is better if using coconut juice for cooking). The sauce should get color and oil on surface. Sauce is served hot. (this sauce usually served with sate or GADO GADO – name of Malaysian salad).
